Friday's Food and A Girls Nite Out

A virtual girls night out that is. Ann over at Ann again and again is hosting another VGNO. Tonight's theme is "pink". She's participating in the breast cancer walk on Sunday, so stop by and give her lots of encouragement! I myself will be staying home and keeping an eye on my poor boy. He got home from school with a sore throat and a fever.......................dun dun duuuuunnnn. Nice of the preschool to notice!


So welcome to Sanity Check for a girls night out! Anyone up for a little green chili? That's whats on the menu for the evening, so grab a drink, pull up a chair and lets have some fun. I'm sticking with the mexican theme and drinking a margarita!


Green Chili


1 lb ground pork 1 medium onion, chopped fine
3 garlic cloves, minced
6 Tbsp olive oil
6 tbsp flour
3/4 tsp cumin
3/4 tsp pepper
4 1/2 cups chicken broth
24 oz whole green chili's, pureed in blender (I used canned Hatch)
3/4 tsp oregano
3/4 tsp salt
4 tsp jalapeno, minced


Brown the pork in a pot with the olive oil, onion and garlic. When browned, add all of the spices and cook for 5 minutes. Sprinkle with the flour and mix it in until all of the oil and fats are absorbed. Cook another 2 minutes. Add half of the chicken broth to the pot. In a blender puree the green chili's and jalapeno with the rest of the chicken broth. Add it to the pot and simmer for at least an hour on medium low. I serve it over long grain white rice and lots of cheese.

  7. OH yeah! I like this recipe. (I just love of cumin :-> ).

    I'm really surprised by BlueViolet's claim that she's never heard of a green chili. I just can't believe that. I need to check with her about that. (Maybe I can send one to her with the Heart-Shaped Rock :-> )
