Cooking 101 - homemade fish and chips

Last night I made fish and chips for dinner, only with no chips! I found 2 lg fillets of Rock fish (which the man at the fish counter told me it was in the Cod family) that I decided to try. It was served with loaded mashed potatoes and corn.

Want to make your own fish and chips? Well here's how. I do have one suggestion though....use cod fish. I was not impressed with the rock fish, it had a lot of bones in it and was not as tender and flaky as cod. I wont be using it again!

You will need the following ingredients:

3 cups corn flake cereal, crushed up
2 cups flour
2 eggs
1 tbsp milk
2-4 lg fillets of cod
4 tbsp cooking oil
Seasoning

Here's how to do it:

Crush your cornflakes in a gallon size bag (use a rolling pin or the palm of your hand), then add the flour and seasonings to it (I use garlic powder, onion powder, salt and pepper with no specific measurements, maybe 1/2 tsp of each). Put the oil into a skillet and heat it over medium high heat. Crack 2 eggs into a bowl and add the milk. Whisk it together until well combined.
Cut your fish fillets in half to make smaller portions, begin by dipping them into the egg mixture and then into the cornflake mixture, making sure they're well coated. Shake that bag good.
Place them gently into the pan, and cook for approximately 4 minutes or until nicely browned. Flip carefully and brown another 3 minutes. Remove them from the pan and drain on a few paper towels to get the grease off. I then put them into the oven (350 degrees) for 10 minutes to make sure they are fully cooked. Serve with your choice of side dish, some malt vinegar and tartar sauce! Enjoy
Tips : You could also do these in a deep fat fryer. I wish I had one to try it out!
You could also cook them a few minutes longer in the pan and skip the oven.

It's Friday and VGNO!!!!

After a very long week of crawling around my house and enduring severe back pain I can say TGIF because I'm upright and walking again even most of the muscle spasms are gone. Thank God.

I think I deserve a VGNO! Kids are going to bed early and I'm going to sit in lovely peace and quiet. So welcome to the party, grab your drink and do some blog hopping. Sign in over at Ann again and Again's Mr. Linky and say hello to everyone that's playing!

I don't know if I should be drinking while taking Flexeril so I guess I'll stick to a virgin drink tonight. This is what I decided on...........

Chocolate punch

4 oz semisweet chocolate
1/2 cup sugar
2 cups hot water
2 quart milk
1 1/2 tsp vanilla extract
1 quart vanilla ice cream
1 quart club soda
1/2 pint heavy whipped cream


In a large saucepan combine the chocolate and sugar with the hot water. Bring to a boil, stirring for 2 mins. Add milk, and continue heating. When hot, beat in vanilla with a rotary egg beater or whisk. Remove from heat. Chill, then pour into a punch bowl over ice cream. For sparkle, add club soda. Top with whipped cream and dust with cinnamon. This will be perfect while making dinner! Tonight's dinner will also be tomorrows cooking 101 lesson, so check back and see what I make.

Bloggography Challange



Lolli at Better in Bulk has a photography challenge this week that I'm participating in. Last week she had a lesson in how/when to use your ISO and get better pictures. I have to say, as much as I love my camera and taking pictures, it's all very confusing. I guess I'm just going to take it one step (lesson) at a time. I just cannot wait for nicer weather to come so I can actually go outside and start shooting! This pictures was taken inside at Funtastic Fun, for Riley's birthday. I was using my Canon Rebel T1i, ISO 400, f11, 1/250 (I think, I've messed with it since then!)

3 Already?

When we were all pregnant with our first children, people always used to tell us "enjoy them every moment you can, because before you know it, they will be all grown up". For some reason I didn't believe them. Now I find myself giving others that very same warning. I cannot believe my baby is turning 3 tomorrow! Happy Birthday Baby Boy!!!! We love you.

Riley you are such a joy to have in our lives and I thank God for you and you're wonderful little soul! I will miss all of your baby ways but I also look forward to watching you turn into a little boy, catching up with your brothers. Sniff, it makes me so sad to think that I wont have anymore babies in my house!

We spent this morning celebrating his birthday at one of the biggest germ farms in town. Funtastic Fun. It's like an indoor amusement park, it has a ferris wheel, train, tea cups, a mini whip it ride, ball pits, jumping castles, arcade games and much more. It also contains every virus known to man! Our trip today consisted of the birthday boy, his brothers, presents, a robot cake and a bottle of hand sanitizer. It was "Funtastic fun" for the kids and pretty tolerable for the adults. Who doesn't like cookies? Who doesn't like to bake cookies? Well that's debatable I guess because I hear from many people that they either love it or hate it. Me? I love it, adore it, live for it.

Kindergarten Registration, What a Joke!

So kindergarten registration "began" today at 7 am and is open for the next week.

I went into the school last week to ask some questions about it, but, I got some answers I wasn't expecting! The school that my kids attend is our "home school", so doesn't that mean that we should get priority over open enrolled students? Apparently not, because I was told is was a 1st come 1st serve type of deal and that it gets pretty crazy on opening day. Here's why....... there is 1 a.m class, 1 p.m class and 1 full day class (which you have to pay $300/month for). There are 25 slots for each class equalling 75 slots and if you end up being #26 in any of those classes, you get put on a waiting list!!! WTH is up with that?

So, I dragged ( or is it drug ?) myself out of bed at 6:30 this morning to be at the school at 6:45. Guess how many people were already in line? I got registration packet #22!!!! So here's hoping that we get in without a problem.

But here's my next question.......What if your kid doesn't get in? Do they just have to skip Kindergarten? Isn't kindergarten required? I don't know, but the whole process sounds REALLY stupid to me. I don't remember it being so complicated when Shay started kindergarten.

Monkey Bread, your family will thank you for it!

Well, I'm still doing photo recipes for now. My camera/computer are just not compatible at the moment and are not cooperating AT ALL!

So anyway, here is the recipe of the week. My mother in Law taught me how to make this and it's soooo easy and pretty cheap. It doesn't last long around my house and let me warn you, it's not low fat or sugar free!

Monkey Bread (it's sooooo yummy)

3 pkgs refrigerated buttermilk biscuits (cut into quarters)
1 stick butter or margarine
1 cup brown sugar
1 cup white sugar
3 tbsp cinnamon

In a sauce pan melt your butter and brown sugar together on medium low heat. While that's melting open your biscuits and cut them into quarters. In a sandwich baggie combine the white sugar and the cinnamon. Add the cut up biscuit pieces a few at a time to the baggie and shake them around to coat the pieces. Put them in to bundt pan. Once all of your pieces are in the pan and your brown sugar is good and melted, pour it over the cinnamon pieces. Bake at 400 degrees for 20-25 minutes. You don't want to over cook it so check it every so often and if it looks like it's getting dry, it's probably time to take it out! As soon as you take it out of the oven, invert it on a plate and let it cool for about 10 minutes and serve.

working out some glitches

Ok, so I tried to shoot a video today with my first "lesson" and the camera died on me! I have to use my old one because I CANNOT figure out how to upload/watch any video's from my new canon. If anyone has any ideas, so that I can use my Canon, that would help me soooo much! I can record the video and then when I go to upload it, it all freezes up on my computer. The few video's that I have been able to do, I cannot watch them because I need some program that I don't have! You would think that that would come WITH the camera! So please, hang tight, I'm working on it!!!!

In the meantime, keep the ideas coming! Thanks for the support everyone :)

Lets get cooking 101 preview

So I'm in the process of starting a new weekly cooking post. Once a week or maybe more I will be posting a video blog with a simple cooking lesson with me and or my kiddos.

The goal of this is to get the attention of young readers and or readers who don't cook very well and would like to learn from the comfort of their computer! We're going to start out simple and I do mean very simple. Starting at the basics and working our way through the cooking world, one recipe at a time. I feel that learning to cook is an essential for everyone. Not only is it more affordable than going out, it's healthier too. When you know how to cook it makes you happier and then you can spoil the people you love and impress the ones you are learning to love!

Here's where you all come in. I want your ideas and requests! Send me an email (cozynic@msn.com) if you have questions or if there is something you would like to learn how to cook. Send people my way and I will love you forever :)

I'm very excited about this and I look forward to hearing from you all, but I do have a question for anyone who knows the answer. I have posted videos before and it seems like they take a LONG time to upload, even if its only a minute and a half long. So how in the world do I get a 10 minute + video to upload??? If anyone has any advice for me I would really appreciate it, if not, this project may take a long time to get up and running, literally. I tried to upload to youtube and it was just as difficult, is it me???

Happy New Year!!! 2010????


Is it really 2010??? That is just so strange to me and yet exciting. It's a new year, a time to start over and get things done. Things you have been putting off or just meaning to do. Make big changes and look forward to all that's in our future. So, here's wishing everyone a happy, healthy, and fortunate 2010 and many more!


I do have a few new years resolutions, and I am planning on sticking to them throughout the year. Wanna hear them? Well first off I registered for school a few days ago and I decided that I'm going to take some photography classes and work on really getting a business of my own up and running. I would feel more confident in myself if I had a few classes under my belt and had more knowledge in the field. That's just how I am, I'm a learner and if I don't feel completely comfortable in what I'm doing I wont succeed.


Second, I'm going to get into shape. I can just hear all of you that know me, asking why I need to work out. I only weigh 108 lbs. and I want to keep the weight, I want to get rid of the muffin top that has taken residence around my hips!!!! I tell people "you don't see me without the clothes and let me tell ya, it's not pretty". My dear sweet hubby gave me a gift card to Victorias Secret and I love him for it, but can I tell you that I swear they do something to their mirrors in the dressing rooms.....maybe it's just the lighting and the full length mirror, but holy cellulite!!!! Seriously, I have never seen myself looking so horrible. I know that the absence of sun is not helping the situation but I have got to get rid of this baby fat that is terrorizing my mid section. If only they could come up with a way to suck all of that fat out of my hips and transfer it to my boobs............sigh. Yup, before I die, I'm getting a boob job. My hubby says no, but dammit, it's not his body and he doesn't think he would like it, but c'mon, he's a man and what man doesn't like big boobs???


So anyway, those are my goals for the year (minus the boob job) and I plan on having a similar body to the one before having kids and a business of my own!
