To keep myself sane I went ahead and made the food that I've been craving; in the middle of our snow storm I made myself a batch of Pico and it turned out really good. I cannot wait until summer when all of the veggies are at their best!
Here's how: Grab some tomatoes, red onion, green pepper, a squeezed lime, fresh garlic and some cilantro. Chop it all up and season it with some salt and pepper. Grab a bag of the closest tortilla chips or some tacos (our dinner) and enjoy!So lets get in the mood for some warmer weather, good food, fun with friends and family! start off with a drink and some scenery!

ReplyDeleteWe had friends over the other night and her salsa was much like this recipe... mmm! mmm! I made burritos too. Unfortunately, we could not find any margarita mix, guacamole, or sour cream... but it was still good.

it was 65* here today and it was so wonderful! but I'm so worried Mother Nature is going to FREAK OUT again and dump another 20 some inches on us. Hope you keep warm!
