Our new favorite snack/dinner

Well it started out by asking the family the usually 3:00 question....."What's for dinner guys?"

Actually I was making the grocery list and trying to come up with something new to make. My husband answered "Runza's" and I said huh? He proceeds to tell me that his mom made them when he was younger and tries to remember what's in them. It sounded like a calzone to me, but after a quick google search I repeated the ingredients to him and we had a winner. I made them the next night and the whole family loves them.

So, I'll pass them on to you for your next dinner creation. Actually they work really well for afternoon snacks or food on the go because you can just pick them up and eat em. No dishes required, but I would suggest a napkin!
Runza - Originated in Russia in the 1800's and it means a filling stuffed into dough.

This is what you'll need:

1 lb ground beef
1/2 lg onion minced
1/2 head of cabbage slice thin
salt, pepper, garlic powder
the recipes I found called for yeast dough but I used 1 lg package Rhodes frozen dinner rolls

Remove the rolls from the packaging and place them on a microwavable plate, "defrost" them for about 45 seconds on power level 3. Just long enough to get them workable. You will be rolling these out flat and filling them.
In a skillet brown the beef, onion and seasonings. When it's cooked thru and the onions are tender drain the fat off. Return it to the skillet and add all of the cabbage, cooking it until it's tender. Remove from the heat.
Sprinkle a cutting board or your kitchen counter with flour. Using a rolling pin roll out your now thawed rolls. I use one roll to make take along snacks and I use two rolls for dinner size portions. If you use just one, place a few heaping spoon fulls onto the dough and pinch them closed at the top. If you use 2 rolls place a large amount of filling onto one and cover with another then pinch around the edges to seal it. Place them on a baking sheet a few inches apart. Bake at 375 degrees until golden brown, about 15 minutes.
Enjoy!!!! Remember this is just a basic recipe. You can add any ingredients you like.

  1. One of my favorite way to use up leftovers is to stuff them in rolls - chili, hamburger helper, casserole, chicken and rice, steak... whatever! Unfortunately, we live in the land of no refridgerator rolls... so sad. I still make 'stuff in bread' but it's not such an easy process these days.

  2. Mmm! We make these with leftover meat from taco night! Pop them in the freezer and thaw as needed for lunch. Will have to try this version too! Sounds tasty!
