Yes I said it. This past week has been so busy and nothing really exciting has happened to even blog about. I think I'm suffering from writers block and summer fever. My kids are getting old enough that it's easier to get out of the house and do stuff. Riley isn't a baby anymore (sniff and cheer all at the same time) and it is soooo much easier to get him out of the house!
This week has consisted of swimming, BBQ's, baseball practice and more swimming. We have had so much fun. I'm just glad it's Monday, I have NOTHING to do! Maybe we can go swimming :) I get to work on my tan, the kids have a blast and they wear themselves out. Who could ask for more?
Like I said before, I don't really have anything exciting to post about, so it going to be a Menu Plan Monday post!!!!
Heres what we will do for the upcoming week.
Grilled Chicken Taco's with cilantro lime rice and beans
Grilled cheese and soup
Spaghetti, Sausage, Salad and garlic bread
Homemade Pizza
Shrimp Stir fry with brown rice
Left overs
1 night out to eat.
Lunches will be easy this week, sandwiches and chips
Breakfast is the usual, cereal, waffles, eggs or what ever sounds good to the kids. I don't eat in the morning!!!

Bittersweet Birthday
I spent 9 months growing as big as a house, pushing for 2 hours and giving birth to a wonderful 9 lb baby boy. You are such a wonderful little man and I love your personality. You are so stinkin funny and you say the cutest stuff. Although you are a little pill at times you are my 2nd angel. I cant believe you are 4 years old already! I'm so excited for you to grow up into a little boy and so sad to see you leave the toddler stage.
Mommy and Daddy love you sooooo much!!!! Happy Birthday Jaxson.

A Pay It Forward Kind of Post
Braja over at Lost and Found in India has a special friend that needs our help. Here is her request.......
At one time or another, we all need a bit of help. Sometimes big, sometimes small, but always, always we need a little help. And today, I wanted to ask for help for a friend of ours, someone most of you know: Joanie M. Her lovely John is in hospital for his chemo treatment, and Joanie is feeling the pinch. Not with paying hospital bills or anything so huge: but just with the little things that add up and overwhelm a girl---fuel for the back and forth to the hospital, parking charges that are $10/hour, phone bills, days off, John's salary loss, and on and on it goes. It's not much is it? But we all know it adds up and can cripple a budget.
And Joanie is in need...
So we're Paypal-ing. And just this once, if you have $5, $10, $20 or a hundred to spare, hit that little icon on the left, and make Joanie's days a little easier. Every cent will reach her and be so appreciated.

Wordful Wednesday........Wild Weather

These past 2 weeks we have had some very wild weather here in Colorado! I cant remember the last time we actually had a "spring season".
Luckily I never caught any of the tornado's on my camera but Jaxson acquired some bruises from being hit by golf size hail. The kids got to see a tornado up close and very personal at daddy's football game and our grass couldn't get any greener or jungle like!

Menu Plan Monday and Chicken Marsala
This week our dinners will be......
Monday - Taco night with rice and beans
Tuesday - Meatloaf and baked potatoes, fresh veggies
Wednesday - Rotisserie chicken, corn on the cob, rice a roni
Thursday - Enchilada Casserole, left over rice and beans
Friday - Pizza night
Saturday - BBQ for Jaxsons birthday party - hot dogs and burgers on the grill and all the fixins
Sunday - will be at a wedding
I have also decided to include a recipe today as well!
Chicken Marsala
1 pkg boneless, skinless chicken breasts, seasoned with pepper and garlic powder
1 15 oz bottle Marsala cooking wine
1 cup chicken broth
12 oz sliced mushrooms
1/2 onion, sliced thin
butter
2 tbsp flour
Saute the chicken breast in a small amount of oil until golden brown, remove from pan and saute the onions and mushrooms till tender and starting to brown. Add 1 tbsp butter and sprinkle the pan with flour. This will make the sauce thicken up! Once you have let the flour cook add the whole bottle of Marsala wine. Bring to a boil and simmer for 10 minutes. Add one cup of chicken broth and and chicken breasts to the pan and cook another 10-15 minutes or until the chicken is cooked thru. Serve over your choice of pasta and garnish with fresh parsley. This is my family's favorite dinner, I hope your family enjoy it as well!

Preschool Field Day Fun
Jaxson had so much fun at his last day of preschool. It went all morning long and there were so many things to do. Shaving cream slip and slide (he wouldn't get near it), water color spray painting, obstacle courses, face painting, projects and a picnic lunch. It was beautiful out and we couldn't have asked for a better day. The kids went home exhausted!

Cheap Entertainment
During Shay's baseball tournament last Saturday the little one got bored and we decided to go for a walk and head down the path to the Platte River, to see what we could find. This is what we found and let me tell you, Jax was mesmerized! He could have stayed all day and watched the water! Since I know zip about Kayaking I couldn't tell you why he was blowing the beach ball up! The hubby thinks it's to help expand their lungs? These guys were not the only ones having fun in the water, and I just had to get a picture of him! I do believe that we are going to make another day of it next week! There's a small beach that the kids can play at and get their feet wet without getting too close to the rushing water. Take some lunch and some sunscreen and we are set! I hope to get more pictures :)

Words cannot describe
We have had a very unexpected death in the family and I just dont feel like writing. Sorry. I will try to be back in a few days. I cant even think straight. Enjoy summer vacation and I will be back soon.
